Ingredients

For The Matcha Fudge Cake

  • 2 cups white sugar
  • 1 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup Dutch dark cocoa powder
  • 1 tablespoon cooking-grade matcha
  • 2 large eggs
  • 1 cup full-fat plain yogurt
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup boiling water

For The Matcha Buttercream

  • 1 cup unsalted butter room temperature
  • 1 ½ teaspoons matcha powder
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • cocoa nibs or chocolate sprinkles for decorating

Instructions

  • Preheat the oven at 350°F.
  • To make a matcha cake batter, break up the eggs and put them into a bowl.
  • Incorporate matcha powder, cocoa powder, vanilla sugar, oil, and yogurt. Whisk until smooth.
  • In a separate bowl, mix the flour with baking soda and salt.
  • Combine dry and wet ingredients and mix until smooth.
  • Mix this batter slowly in boiling water into an even mixture.
  • Prepare a baking tray with grease.
  • Incorporate the cake batter into it. Place it in the oven for baking.
  • The cake wll take 30-35 minutes to bake. Meanwhile get the frosting ready.
  • Use a stand mixer fitted with paddle attachment. Beat the butter using matcha powder.
  • Add vanilla and sugar gradually. Create a smooth and fluffy mixture.
  • Once the cake is cool and it is cool, you can frost it with buttery frosting.
