Lemon Souffle

1 + 1/4 cup 10% cream divided ⅓ + 2 tablespoons sugar divided 3 egg yolks ⅓ cup all-purpose flour zest from 1 lemon 1 teaspoon thyme finely chopped 2 tablespoons unsalted butter 1 teaspoon vanilla extract 4 egg whites 1 tablespoon powdered sugar for dusting
Preheat the oven to 350 ℉.
The cream should be simmered at a low temperature in a saucepan. Switch off the flame when the cream is simmering.
Beat egg yolks with flour, thyme sugar, and lemon zest.
Mix the flour with hot cream, then start the fire.
Cook the batter until it becomes thick. It could take up to 60 minutes. Stop the flame as it becomes thicker and allow it to cool.
In a different bowl, beat the egg white until it reaches an even, stiff peak.
Mix the batter into egg white using gentle hands.
Pour the batter into ramekins uniformly and allow it to bake.
Puffing can take anywhere from 25 to 30 minutes.
Sprinkle the souffle with sugar and powder before serving.
