Ingredient Notes and Variations

  1. Cream: It ensures a rich texture in the souffle. You can use any heavy or whipped cream to achieve the desired texture.
  2. Sugar: granulated sugar is one of the best choices to sweeten the souffle. But you can use raw sugar or powdered sugar to bring innovation.
  3. All-purpose flour: It helps thicken the souffle base and stabilize the mixture. Sift the flour while using it to avoid lumps forming in the batter.
  4. Thyme: The star of the recipe brings aroma and taste. It perfectly complements the citrusy notes of lemon. You can use fresh or dried thyme. Alternatively, you can twist traditional recipes with other herbs like rosemary or lavender.
  5. Unsalted butter: Avoiding souffles sticking with the baking tray is essential. It also keeps the souffle soft and moist. You can use olive oil, canola, or vegetable oil instead.

  • In another bowl, beat the egg whites until fluffy. Add the remaining sugar and combine them well.
  • Fold the cream and flour batter in the egg whites.

3: Bake the souffle
