Ingredients

  • 1 + 1/4 cup 10% cream divided
  • + 2 tablespoons sugar divided
  • 3 egg yolks
  • cup all-purpose flour
  • zest from 1 lemon
  • 1 teaspoon thyme finely chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 4 egg whites
  • 1 tablespoon powdered sugar for dusting

Instructions

  • Preheat the oven to 350 ℉.
  • The cream should be simmered at a low temperature in a saucepan. Switch off the flame when the cream is simmering.
  • Beat egg yolks with flour, thyme sugar, and lemon zest.
  • Mix the flour with hot cream, then start the fire.
  • Cook the batter until it becomes thick. It could take up to 60 minutes. Stop the flame as it becomes thicker and allow it to cool.
  • In a different bowl, beat the egg white until it reaches an even, stiff peak.
