Welcome to the world of blackberry marshmallows, where the natural sweetness of blackberries meets the pillowy softness of marshmallows. The sweet has a fluffy perfection that melts in your mouth.
Blend the blackberries in a blender to make puree.
Strain the puree to remove residue.
Add gelatin to blackberry puree and whisk until gelatin softens.
Take a pan and dissolve sugar, salt, and corn syrup in the water until dissolved.
Increase the heat and boil until it reaches 230 to 250 degrees F. Turn on the mixer with the whisk attachment, slowly pour the hot syrup into the gelatin mixture, and whisk it well for 15 minutes.
Take a tray with butter paper and grease it. Pour the mixture into it and set it for 2 to 3 hours.
Sift cornstarch and powdered sugar and toss it on the slices while serving.
