Ingredients

  • ¾ cup whole ricotta cheese
  • cup raw sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs separated
  • 1 cup whole milk
  • 1 cup white flour sifted
  • cup whole wheat flour sifted
  • 1 ½ teaspoon baking powder
  • 1 pinch of sea salt
  • 1 cup fresh berries roughly chopped for serving
  • Maple syrup for serving

Instructions

  • Mix the egg yolks, vanilla, raw sugar, and ricotta cheese for pancake batter.
  • Add milk gradually, and beat until you get an even batter.
  • Incorporate baking powder, sea salt, and baking soda into the wheat and white flour.
  • Mix all ingredients to create a buttery batter.
  • In a different bowl, gather egg yolks and beat them until they become stiff.
  • Mix them gently into the batter of flour.
  • Incorporate the berries into the batter.
  • On the stove, cook the skillet. Butter or grease it.
  • Make 1/4 cup of pancake batter and pour it onto the skillet. Cook on both sides until golden.
  • Drizzle maple syrup over the top and garnish with berries as you serve.
