Ingredients

  • 6 scallions, finely chopped
  • 2 cups chopped broccoli or broccolini
  • 1 pinch smoked paprika
  • ¼ cup crumbled feta cheese

Instructions

  • In a 10 or 12-inch cast-iron skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the finely chopped scallions, chopped broccoli (or broccolini), and a pinch of salt and pepper to the skillet.
  • Cook the mixture, stirring occasionally, until the broccoli is tender and vibrant green, approximately 5 to 8 minutes.
  • Stir in the smoked paprika, ensuring it is well incorporated.
  • Pour the egg mixture into the skillet, gently shaking the pan to evenly distribute it.
