Ingredients
- 6 scallions, finely chopped
- 2 cups chopped broccoli or broccolini
- 1 pinch smoked paprika
- ¼ cup crumbled feta cheese
Instructions
- In a 10 or 12-inch cast-iron skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the finely chopped scallions, chopped broccoli (or broccolini), and a pinch of salt and pepper to the skillet.
- Cook the mixture, stirring occasionally, until the broccoli is tender and vibrant green, approximately 5 to 8 minutes.
- Stir in the smoked paprika, ensuring it is well incorporated.
- Pour the egg mixture into the skillet, gently shaking the pan to evenly distribute it.
