Ingredients For Blackberry Marshmallows
- Blackberry puree
- Water
- Gelatin
- White sugar
- White corn syrup
- Salt
- Vanilla extract
- Corn starch
- Powdered sugar
Ingredient Notes and Variations
Blackberry puree: Choose fresh and ripe blackberries for the best flavors. You can also use frozen blackberries if fresh are not available.
Gelatin: Select unflavored gelatin powder or sheet. Follow the instructions to use the correct measurements based on the quantity of marshmallows you are preparing.
White corn syrup: It is best due to its neutral flavors. However, you can use light corn syrup as an alternative.
Corn starch: It helps to thicken the marshmallow mixture and prevent it from sticking to the pan. You can use powdered sugar for this purpose. But adjust the sugar quantity to keep the flavors balanced.
How to make Blackberry Marshmallows
Step 1: Prepare the blackberry puree
Take a mixer and smash the blackberries. Strain the mixture twice to eliminate seeds and residue.
Make half a cup of puree and set it aside.
Step 2: Prepare marshmallow
Add blackberry puree and gelatin to the bowl and mix until the gelatin softens. It takes up to 10 minutes.
Take a tray with butter paper and grease it with oil.
Take a pan and add water, corn syrup, and salt. Cook and mix until sugar melts in the water.
Increase heat and boil without stirring until temperature reaches 230-250°F.
Turn on a low-speed mixer with a whisk attachment and slowly pour the hot syrup into the gelatin mixture. Mix until both mixtures are well combined. Beat until mixture thickens and fluffy. It takes 15 minutes.
Pour this mixture into the tray immediately and let it cool for 2 to 3 hours at room temperature. Sift cornstarch and powdered sugar into the mixture.
Make slices of 1-2 inches before serving.
