Ingredient Notes and Variations

  1. Whole ricotta cheese adds a creamy texture and richness to the pancakes. It also provides a slight tanginess that perfectly complements the sweetness of berries. You can use skimmed ricotta cheese as an alternative.
  2. Raw sugar adds sweetness to the pancakes with slight caramel-like flavors. You can use coconut sugar or granulated sugar for a distinctive taste.
  3. White flour: It provides a base for the pancake and keeps them fluffy and light crumbly. You can use all-purpose flour instead.
  4. Whole wheat flour: It provides a nutty flavor to the pancakes and has nutritional benefits. It makes the pancakes slightly denser.
  5. Maple syrup is the best natural sweetener and classic topping for a pancake. It beautifully pairs the flavors of berries and cheese. You can use honey, fruit preserves, and agave syrup as an alternative.
