French Carrot Salad

The French carrot salad is an excellent, slightly sweet, zesty, and spicy salad that tastes best on summer days. Super easy and refreshing to try.

Ingredients

  • 1 green onion
  • 2 tbsp roughly chopped parsley
  • 1 lb peeled Carrots
  • 1 tbsp lime juice
  • tbsp olive oil
  • tbsp vegetable oil
  • 2 tsp honey
  • ½ tsp kosher salt
  • 2 tsp Dijon mustard
  • ½ tsp freshly ground black pepper

Instructions

  • Take carrots and grate them with either a box grater or a food processor. Place grated carrots into a large bowl.
  • Take green onions and fresh parsley and add them to the mixing bowl.
  • Take another small bowl and mix Dijon mustard, lime juice, olive oil, honey, salt, and pepper to make a dressing for the Salad.
  • Pour all the dressing on top of the carrot salad and blend to combine.
  • Your French Carrot salad is ready to serve.
