Ingredients

For The Peach Filling

  • 8-10 peaches thinly sliced
  • ½ cup raw sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon coconut bakery emulsion
  • 1 teaspoon vanilla extract

For The Coconut Cobbler

  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup sweetened shredded coconut
  • ½ cup raw sugar
  • ½ cup unsalted butter cold & cubed
  • 1 teaspoon coconut bakery emulsion
  • 1 teaspoon vanilla extract
  • cup coconut milk

Instructions

  • Preheat the oven to 350 degrees F.
  • Toss sliced peaches with coconut emulsion, sugar, vanilla, and cornflour.
  • Pour the peach mixture into a baking tray.
  • Set aside until ready to make the topping.
  • To prepare the coconut cobbler, combine flour, shredded coconut, sugar, salt, and baking powder in a mixing bowl.
  • Combine butter and flour to form a crumbly mixture.
  • Combine coconut milk, emulsion, and vanilla.
  • Stir all ingredients until they clump.
  • Add it to the tossed peaches.
  • Place the baking tray in the oven and cook for 40-50 minutes.
