Ingredients

  • 1 cup quick oats
  • ½ cup caramel cubes or sauce store-bought or homemade
  • ¼ cup unsalted butter
  • ¼ cup cocoa powder
  • ¼ cup brown sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  • In a saucepan over medium heat, melt the butter. Add the brown sugar and salt. Stir well until the sugar is dissolved and the mixture is smooth and bubbly.
  • Add cocoa powder and give a good stir.
  • Remove the saucepan from heat and stir in the caramel cubes and vanilla extract. Mix until well combined.
  • Pour the caramel mixture over the oats into the mixing bowl. Stir thoroughly to coat all the dry ingredients evenly.
  • Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet. You can shape them into cookie shapes or keep them rustic.
  • Allow the cookies to cool and set at room temperature for about 30 minutes to an hour.
  • Once the cookies have been set, transfer them to an airtight container for storage. They can be stored at room temperature for a few days or in the refrigerator for longer shelf life.
