For Casserole
1head of large broccoli
1large cauliflower
800gPotato
1carrot round chopped
1red onion, finely chopped
2cloves of minced garlic
¼tspsalt
½tspblack pepper
¼tsppaprika
Monterey jack cheese according to taste
1Mozzarella cheese
⅓seasoned breadcrumbs
For Sauce
100gbutter
3tbspall-purpose flour
500mlvegetable or chicken stock
100mlMilk
1tspsalt

Instructions
Add the evenly chopped potato, cauliflower, and broccoli into the boiling water. Boil 10 minutes, strain the water, and then transfer the veggies into an ice bath.
Chop onions, carrots, and other side vegetables, sauté them for 5 minutes and set them aside.
Make the sauce by melting butter and adding other ingredients, including leek, flour, and chicken broth.
Add cheese, milk, and seasonings to the sauce to make it thick and creamy.
Now take all the vegetables in a bowl and add the sauce. Sprinkle some seasoning, and bake the dish in a preheated oven at 350°F for 25-30 minutes. Your casserole is good to go.
