Ingredients

  • 113 g or ½ cup unsalted butter
  • 1 tsp vanilla extract
  • 2 tsp lemon zest
  • 120 g 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • 100 g ½ cup fine sugar

Instructions

  • Melt and brown the butter, then mix with vanilla and lemon zest.
  • Sift dry ingredients: flour, baking powder, and salt.
  • Whip eggs and sugar until tripled in volume.
  • Fold in dry ingredients and butter mixture.
  • Refrigerate batter for at least 30 minutes
  • Preheat oven to 180°C (355°F), grease molds.
  • Pipe batter into molds, tap, and bake for 12 mins.
  • Decorate as desired.
