Ingredients
4cupscorn kernels (fresh or frozen)
2OzScallions (1 bunch)
1yellow onion, sliced
2garlic cloves, minced
2tbspolive oil
2tbspsoy sauce
1tbsphoney
Salt and pepper to taste
Instructions
Heat oil in a non-stick pan over medium heat.
Add garlic and cook until fragrant.
Add corn kernels and cook until lightly browned.
Add honey, soy sauce, and black pepper and stir to coat the corn.
Cook for another 2-3 minutes until the sauce thickens and coats the corn.
Serve hot, garnished with chopped green onions.
Notes
Fresh corn kernels are recommended for this recipe, but frozen corn can be used as well.
Be sure to cook the corn until it’s lightly browned to bring out its natural sweetness and add texture to the dish.
Adjust the amount of honey and soy sauce to your liking. Add more if you prefer a sweeter dish, or less if you prefer a less sweet dish.
For a spicier version, add a pinch of red pepper flakes or diced jalapenos to the stir-fry.
