Ingredients

  • 1 medium head Nappa Cabbage chopped
  • 3 green and yellow bellpeppers chopped
  • 3 scallions chopped
  • 1 cucumber sliced in halves
  • 3 medium-sized carrots shredded
  • 30 g Fresh parsley chopped
  • 1 tbsp Olive oil
  • tsp lemon juice
  • Salt and black pepper up to taste

Instructions

  • Chop all the vegetables and add to a large mixing bowl.
  • Drizzle 1 tbsp olive oil.
  • Squeeze half a lemon and mix well.
  • Add salt and pepper up to taste. Serve fresh.
