For Salad
1head romaine lettuce-rinsed, dried, and chopped
1cuphalved cherry tomatoes
2large English cucumbers, sliced
1thinly sliced red onion
1chopped red bell pepper
1chopped green bell pepper
4ozcrumbled feta cheese
⅔cupKalamata olives, cut into thirds
1avocado peeled, stoned and sliced
For Greek Salad Dressing
4tbspextra virgin olive oil
3tbsplemon juice
1tbspdried oregano
1mashed garlic clove
1tspSea Salt
Ground black pepper to taste
Instructions
Wash the vegetables and cut the avocado, onions, cucumbers, and tomatoes. Place them in a larger bowl, and add olives also.
Add salt and pepper to season the vegetables, pour vinegar and extra virgin oil, and mix them well.
