Best Air Fryer Egg Bites

These yummy Air Fryer egg bites are an easy-to-make, healthy brunch item as well as a lunchbox meal. They are more cost-effective to make than to buy from a restaurant. You can refrigerate or freeze them for later use as well.

Ingredients

  • 4 whole eggs
  • ¼ cup sour cream or Greek yogurt
  • 3 oz chicken chunks or cooked minced beef
  • 3 cherry tomatoes chopped
  • ½ cup cheddar cheese shredded
  • 1 jalapeno pepper
  • 1 bell pepper chopped
  • ½ tsp Italian seasoning
  • ¼ tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp parsley chopped

Instructions

  • In a mixing bowl, crack eggs and whisk them along with sour cream and seasonings.
  • Set cupcake liners and layer them with meat, shredded cheese, and vegetables.
  • Pour the egg mixture and set the liners carefully in the air fryer.
  • Bake at 300 °F for 10 minutes. Add cheese to the top and bake again for 2 minutes.
  • Serve with cream cheese dip or your favorite side.
