For The Graham Cracker Crust
1 ½cups graham cracker crumbs
1teaspoonvanilla extract
⅓cupunsalted buttermelted
Dash of Salt
¼cupwhite sugar
For The Coconut Banana Cream Filling
2and 1/2 cups whole milk
¼cupcornstarch
1cupflaked sweetened coconut
½cupwhipped cream
2ripe bananassliced
¾cupsugar
1teaspoonvanilla extract
2eggs
For The Whipped Cream
1 ½cupswhipping cream
toasted coconut
1teaspoonvanilla extract
2tablespoonssugar
Instructions
Mix graham cracker crumbs, salt, sugar, vanilla, and melted butter to make a crunchy crust.
Add a spoonful of this mixture in mason jars and press them.
Take a pan and simmer the coconut and milk.
In another bowl, whisk eggs, cornstarch, and sugar.
Mix this egg mixture in the milk and stir consistently until it thickens.
Turn off the flame when it reaches a custard-like consistency.
Let it cool at room temperature.
Whisk the cream in a bowl until fluffy.
Take jars and start layering.
Add coconut cream to the graham cracker base, top a layer of ripe bananas, and add coconut cream again.
Pipe the whipped cream on top and sprinkle toasted coconut.
