Apple Carrot Cupcakes

- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- 1 pinch nutmeg
- 1 cup grated carrots
- 1 cup grated apples
- 1 cup brown sugar
- ¾ cup vegetable oil
- ½ tablespoon baking soda
- ¼ teaspoon cinnamon
- 2 eggs
- 1 teaspoon pure vanilla extract
Preheat the oven and keep the temperature at 350°F.
Mix baking soda, nutmeg, flour, cinnamon, and sugar in a bowl.
Add grated apple and carrot to the dry ingredients. Don’t over-mix.
Beat eggs, oil, sugar, and vanilla extract until fluffy.
Incorporate the dry and wet mixtures.
Transfer the batter to a cupcake tin.
Bake for 15 to 20 minutes.
