Ingredients

  • ½ cup unsalted butter
  • 1 cup light brown sugar packed
  • ½ cup almond flour
  • ¼ cup granulated sugar for rolling
  • ½ cup dark chocolate melted & cooled
  • ¾ cup natural creamy almond butter
  • 1 large egg
  • 1 large egg yolk
  • 1 pinch nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ½ cup all-purpose flour
  • 1 pint vanilla ice cream

Instructions

  • Preheat the oven and keep the temperature at 325°F.
  • Combine the ingredients to make dough.
  • Make small round cookies and place them on a baking sheet.
  • Bake them for 10 to 15 minutes or until they achieve a golden hue.
  • Let them cool before drizzling dark chocolate.
  • Fill in the ice cream between two cookies while serving.
  • Don’t place them after filling ice cream. If you want to serve later, place them in the freezer.
