Ingredients

  • 4 medium-sized russet potatoes
  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil finely chopped
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp dried rosemary
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  • Scrub the potatoes clean and pat them dry. Place a potato between two chopsticks or wooden spoons to act as a guide, preventing you from cutting all the way through.
  • Make thin, even cuts along each potato, about 1/8-inch apart.
  • Drizzle olive oil over the potatoes, making sure to get some in between the slices.
  • Sprinkle dried basil, dried oregano, dried rosemary, and garlic powder over the potatoes. Season with salt and black pepper to taste.
  • Preheat your air fryer to 380°F.
  • Arrange the potatoes in the air fryer basket, ensuring they are not overcrowded. Cook for 35-40 minutes, or until the potatoes are crispy on the outside and tender on the inside.
  • Garnish with fresh basil and a sprinkle of Parmesan cheese before serving.
