Ingredients

For The Muffins

  • ¾ cup full-fat plain or vanilla yogurt
  • ½ cup freshly squeezed orange juice
  • cup unsalted butter melted
  • ¾ cup turbinado sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 1 ¼ cup all-purpose flour
  • ¾ cup rolled oats
  • 2 teaspoons orange zest
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon fine salt
  • ½ teaspoon ground nutmeg
  • 1 cup fresh cranberries

For The Streusel

  • ½ cup all-purpose flour
  • ½ cup turbinado sugar
  • 1 teaspoon orange zest
  • 1 pinch of salt
  • ¼ cup unsalted butter cold & cubed

Instructions

  • Preheat the oven and keep the temperature at 350℉.
  • Prepare a muffin tray and grease it.
  • Mix orange juice, vanilla extract, eggs, yogurt, sugar, and butter until well combined.
  • Sift in oats, baking soda, all-purpose flour, baking powder, nutmeg, and salt. Fold the ingredients with light hands.
  • Add cranberries and fold them in the muffin batter.
  • Divide the mixture in the muffin tray equally.
  • Set it aside and prepare the streusel.
  • Mix sugar, flour, salt, and orange zest in a bowl.
