- 3 tablespoons extra virgin olive oil
- 1 medium onion thinly sliced
- 3 cloves garlic finely chopped
- 1 cup sliced mushrooms
- 3 kale leaves roughly chopped & stems removed
- ½ cup smoked sausage diced (or ham, pancetta, etc)
- 1 tsp salt & pepper to taste
- 2 ½ cups grated Swiss or Gouda cheese

- Mix them well and let the yeast activate.

- Once the mixture comes together like a dough, knead it for 10 minutes.

- Once the dough doubles, roll it and make a disk like a pizza base.
- In a pan, saute the onion until translucent.
- Add kale, mushrooms, salt, and paper, and cook until kale wilt down.

- Pour the kale mushroom topping and spread the cheese evenly.
