Ingredient notes and Variations:

Potatoes: The best potatoes to make this recipe are the Yukon Gold or Russet potatoes. The reason is that they are not too waxy, and maintain their shape after high-temperature cooking. Both of them get a nice crisp exterior when cooked.

Note: To give this classic recipe a unique twist, use sweet potatoes.

Olive oil: Spraying a bit of olive oil on the potatoes makes them crisp and helps achieve a nice golden texture. You can use avocado or sesame oil too.

Parmesan cheese: Parmesan cheese is the best one to grate onto the potatoes. Alternatively, you can use Pecorino Romano cheese. It has a similar texture and grates well.

Fresh basil: Chop some of the fresh basil and garnish it on the prepared hassleback potatoes. It gives a nice, fresh aroma and a pleasant look to the dish. If the basil is not available, use fresh cilantro or parsley.

Dried herbs: Dried herbs like basil, oregano, and rosemary infuse their unique flavors and aromas in the potatoes during cooking.

Garlic powder: Garlic powder gives a strong and bold flavor and accentuates the flavor of other ingredients. You can also use a fresh clove of garlic and chop it finely before using.

Salt and black pepper: Use salt and black pepper to taste. If you prefer the potatoes more spicy, you can use cayenne pepper, chili flake, or chopped jalapenos.

1: Preparing the potatoes

  • Wash all the potatoes thoroughly to remove all the dirt. Do not peel the potatoes.
  • With the help of a sharp knife, make small slices in the potatoes without separating them. Make thin, even cuts along each potato, about 1/8-inch apart, ensuring not to cut all the way through. Use wooden chopsticks to serve as a guide. This helps in keeping the slices even.
  • Keep them soaked in a bath of cold water for at least 5 minutes. This will help remove excess starch from them.
  • Remove from water and let them sit for 5 minutes.

2: Seasoning the potatoes

  • Spray some olive oil on the potatoes.
  • If you are using fresh chopped garlic, coat it over the potatoes or mix in olive oil before applying.
  • Mix all the dried herbs and season the potatoes with half of this mixture.
  • Add salt and black pepper. You can use chopped jalapenos or cayenne pepper too.

3: Air frying the potatoes

  • Preheat the air fryer to 380F.
  • Arrange the potatoes in the lined air fryer basket. Make sure that you do not overcrowd it.
  • Cook the potatoes for at least 15 to 20 minutes.
  • Drizzle the remaining mixture of dried herbs and cook the potatoes again for 20 minutes.
  • Check if the potatoes are cooked thoroughly by inserting a sharp knife into them. Cook for 5 more minutes if not yet done.
  • When the skin is crisp and the exterior becomes nice and slightly golden, take them out of the Air fryer basket and grate some parmesan cheese over the top.
  • Garnish with chopped fresh basil or cilantro.
  • Serve them hot along with sour cream or your preferred dip.

  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil finely chopped

Instructions

  • Scrub the potatoes clean and pat them dry. Place a potato between two chopsticks or wooden spoons to act as a guide, preventing you from cutting all the way through.
