I have added beef mince, but if you like chicken, feel free to customize it. The same goes for veggies too. Go for mushrooms, olives, onions, and tomatoes if you do not like the combination of bell peppers and scallions.

These protein-filled Egg Bites are an awesome breakfast, especially if it is hard to juggle your day with everything you feel you have to do. It is easy to put together, only requiring a few simple ingredients and step-by-step procedures that you can follow easily.

Egg bites are a sound menu option for keto, paleo, or weight loss diets. And the best thing, you can use your leftovers to create this exciting and easy-peasy snack.

  • 6 to 8 large eggs
  • ½ cup Monterey jack cheese shredded
  • ½ cup shredded gruyere cheese
  • ¼ cup whole milk cottage cheese
  • ¼ tsp sea salt

  • 1 roasted red capsicum diced
  • 3 green onions finely chopped
  • 1 cup baby spinach leaves finely chopped

This Starbucks copycat recipe includes at least one source of animal protein because I want my daughter’s diet to be a high-protein diet. But if you are not a beef lover, replace it with chicken mince or roasted pieces of turkey. The recipe is all open for customization.

If you don’t like meat, you can always omit the meat and chicken and go for your favorite vegetables. You can add as many veggies as you like, but try not to overload the muffin trays. You can add chopped potatoes, green onions, green chilies, mushrooms, olives, corn, spinach, chopped cabbage, etc.

Cheese Content

When there is some baking, there is a lot of cheese (or at least I do add a lot) because I love the baked cheese pull. So, I have added all 3 favorites of mine i.e. homemade cottage cheese, Monterey jack, and gruyere cheese. Mozzarella is also a good option. If you have some parmesan at home, feel free to use it to make it a bit creamier and cheesier.

How to make Vegan Egg bites?

Step one: Preparing the mixture

If you are using beef mince, be sure that it is tender and cooked thoroughly. If you have chicken, shred it or chop it into small pieces.

Prepare the veggies. Chop the capsicum, onion, olives, mushrooms, or anything you like to add. Set it aside.

Use a blender to prepare the egg mixture. Crack 6 to 8 eggs in the blender jug – this will be enough for 3-4 servings depending on the requirements. Add your favorite cheeses and a pinch of sea salt. Blend these ingredients for about 2 minutes. Ensure that the mixture achieves a smooth consistency and that all the ingredients combine well. Set it aside.

Step two: Setting the egg bite maker

Preheat the egg bite maker for 2 to 3 minutes. Pour about 1 cup of water on its heating plate. This will allow the egg bites to cook in a water bath. It makes them soft and smooth.

In the silicone cups, add the prepared meat and vegetables. Add only 1 teaspoon so as not to overload the cup.

Pour in the blended egg and cheese mixture so that ¾ of the cup fills up. Set these cups on the top of the heating plate filled with water.

Step three: Cooking the egg bites

Close the lid of the egg bite maker and allow the bites to cook for 7 minutes.

Check after 7 minutes. If the egg bites have become nicely golden on the top, they are ready. Turn off the egg bite maker and let the bites cool.

Serve the egg bites as it is or with the hot sauce.

Storage Instructions

Refrigeration:

If you want to refrigerate your egg bites, allow them to cool down and store them in an airtight container. Store cooled Egg Bites in an airtight container in the fridge. This keeps them fresh for 3 to 5 days. You can eat them cold but heating for a few seconds in the microwave tastes better.

Freezing:

Another reason why I love these egg bites is that you can make and freeze them. Simply prepare the egg bites as per the recipe. Allow them to cool down properly. Place them on a flat surface, such as a baking tray or a cutting board, and allow them to sit in the freezer for about an hour. After that, place them in a freezer-compatible container and store them for up to 2 months.

Reheating:

The best method is to take the egg bites out of the freezer and let them rest in a refrigerator for about an hour. Heat them in a microwave oven for 30 seconds, and you are good to go. However, you can also directly microwave them from the freezer for 2 to 3 minutes.

  • Crack the eggs and pour them into a food processor. Add cottage cheese, gruyere cheese, Monterey jack cheese, and salt. Blend for 2 to 3 minutes or until the ingredients combine and form a smooth, creamy mixture.
  • Preheat the egg maker for 3 to 4 minutes. Fill the Silicone cup with water and pour in the egg maker.
  • Fill the silicone cups with mince and vegetables. Pour over the egg mixture until the cups are ¾ full. Stir the contents with a spoon.
